A dessert made by whisking egg yolks, wine (traditionally marsala) and sugar together. The mixture is whisked in a bowl over simmering water so that the egg yolks cook as they thicken into a light, foamy custard.

Zabaglione is best-made just before serving. In France it's called sabayon or sabayon sauce.
