 Pastorio's Basic Meat Brine - This amount of meat brine will take care of 3 to 4 pounds of meat or poultry. The time needed to brine varies; for poultry, at least 24 to 36 hours. Beef, pork, or veal roasts benefit from 3 or 4 days in the brine.
