Procedure: Soak sultanas in rum, brandy or water Preheat oven to 200°C or 180°C fan-forced. Butter a 2-litre capacity baking dish. Peel and core the apples. Slice thinly. Layer apples in the prepared dish. Sprinkling with sultanas and squeezing a bit of lemon juice between each layer. Sift flour, salt and baking powder into a bowl. Stir through sugar. Rub through the butter. Make a well in the centre and pour in the buttermilk. Using a flat bladed knife, make slicing movements until the mixture comes together and forms rough dough. Roughly dollop this mixture over the apples. Sprinkle with the cinnamon and sugar and sprinkle with the almonds. Bake for 30 minutes or until topping has browned. Stand for 5 minutes before serving. Serve with cream or ice cream |
