1 cup  dried red lentils
2 cups  water
2 Tbs  vegetable oil
1   small onion
2   cloves garlic
1   tomato
   1/2 inch fresh ginger
1/2 tsp  turmeric
1 pinch  cinnamon
1/2 tsp  salt
 

Place the lentils and water in a pot, bring to a boil and cook ver medium heat for about 20 minutes or until the lentiles are tender and most of the water has been absorbed.

While the lentils are cooking, heat the oil in a frypan over medium-high heat. Have someone chop the onion, garlic, tomato and ginger. Add the onion and garlic to the pan, and cook for 2-3 minutes. Add the tomato, ginger and spices, and reduce the heat to medium. Cook for 12 minutes or until the tomato starts to collapse.

When the lentils are done, add them and any liquid still left in the frypan. Toss, season with salt and serve.
