Preheat oven to 350°F. Rinse chicken breasts, pat dry and dredge in flour. Heat a large skillet over medium-high heat. Coat skillet with vegetable cooking spray. Add chicken and brown on both sides, about 4 minutes total. Set aside in a baking dish. In the same skillet over medium heat, cook onion in water for 5 minutes; add apple and cook 1 minute longer. Spoon over reserved chicken. In a small bowl combine chicken broth, salt, curry, ginger, turmeric and pepper. Pour over chicken and bake, covered, 40 minutes. Add raisins and cook 5 more minutes, until chicken is done.* Serve hot. |
