1 3/4 cups  sugar
1/2 cup  self rising flour
5 large  eggs
2 cups  milk
2 tsp  Vanilla
1/4 cup  margarine or butter
7 oz  Flaked Coconut
1 cup  desiccated coconut ***if desired*
 

Mix sugar & flour together. Add eggs, milk vanilla and margarine. Beat until well blended and fold in coconut. Turn into 2 well greased and floured 9 inch pie pans. Bake in a 350° oven for 40 minutes or until golden brown crust forms as pie bakes. Makes 2 pies

Preparation time: 10 minutes

Cooking time: 40 minutes

Ready in: 50 minutes

Cooking Tips

I have adjusted mums recipe a bit. I throw in two hand full's of desiccated coconut. Also only cook these pies glass pie pans. Don't worry if the mixture seems a bit too runny. All will be well. After cooking you will end up with a 3 layered custard tart, with a base, custard filling and a browned coconut top.
