1 15 Oz. Can  Quartered artichoke hearts in water, drained
1 6 Oz. Jar  Marinated Baby Mushrooms and Their Liquid
1   Shallot, Coarsely Chopped
4 Sprigs  Fresh Tarragon Leaves, Stripped
3 Tbs  White Wine or Champagne Vinegar
1/2 Cup  Sour Cream, Reduced Fat
2-3 Cloves  Roasted Garlic, Minced
1/4- 1/3 Cup  Grated Parmesan Cheese
1-2 Tbs  Minced Fresh Parsley
   Kosher Salt
   Black Pepper
 

In a food processor, combine artichokes, mushrooms, shallot, tarragon, vinegar and garlic. Season with salt and pepper and process until smooth. Remove from processor and add sour cream, parmesan cheese and parsley. Serve with vegetables for dipping (we had a selection of baby carrots, cucumber slices, red and orange bell peppers, and celery hearts).
