Pita breads, grilled and cut into wedges, for dipping Combine beans, tahini, oil, pepper flakes, cumin, coriander, garlic, salt, water and lemon juice in a food processor bowl and grind into a smooth paste. Transfer to a small dish and surround with warm grilled pita bread wedges. To grill pitas, stabilize BGE at around 400°F.- 450°F. Lightly brush both sides of pita with olive oil, or spray both sides with cooking spray, and place on grill. Sear about 1 minute per side, just long enough to develop grid marks and warm bread up. Remove and cut into wedges. |
