Ingredients
5 lb  pork butt cleaned of any silver skin and very little fat
   cayenne(if you like it hot)
   salt & pepper
   fennel seeds
   garlic
   onion finely chopped
 

Procedure

In a meat grinder grind the meat twice.

Add all the seasoning and work in a mixing bowl.

Let rest in fridge over night to let flavors blend then form into patties

Heat up the BGE to 600 degrees approx 5 minutes a side

and cook to a med well done stage
