Paella is a true Spanish dish meant for special occasions and what could be more of a special occasion than a "Celebration of the Good Life"?
Ingredients
   Scallops (10-15 ct)
1 lb  Butterball chicken
1 lb  Shrimp (10-15 ct)
   Mussels (10-15)
   Clams (10-15)
2 cups  Valencia Rice (short grain)
2 links  chorizo sausage
1   red bell pepper
1   green bell pepper
5 cups  chicken stock
15 threads  SAFFRON
1 med  onion
 

Procedure

In a large saute skillet heat olive oil and begin to brown the chicken

Remove the chicken when it is browned on both sides.

Add the chopped onion and sweat for about 3 mins.

Add the rice into the onions and cook about 1 min.

Next add the SAFFRON immediately add the 5 cups of chicken stock.

Bring this mixture to a boil and then reduce the heat and simmer 10 minutes.

After 10 mins remove the lid and arrange the chicken, seafood and sausage.

Carefully add the peppers. Replace lid and simmer about 10-15 minutes.

After the 10-15 mins has expired open lid and let stand for 5 mins .

Serve the Paella in the skillet.
