Ingredients
1 lb  cleaned crawfish tail meat
2 lbs  cooked rice
2   lg eggs
1   bunch chopped scallions
1/2 lb  Parmesan cheese
   salt and black pepper flour for dredging
   vegetable oil
 

Procedure

Mix the crawfish,rice,eggs,scallions,cheese and salt and pepper in a large mixing bowl.

In a med high heated pan heat oil and begin to saute the crawfish patties.

Cook till golden brown on both sides and serve warm.

Servings: 1
