3 lbs  Hearts of palm, slice into 1/2" pieces
1 lb  Chayote, peeled and julienne
2 ea  Red peppers, small dice
2 ea  Yellow peppers, small dice
2 ea  Green peppers, small dice
1 bu  Scallions, bias sliced very thin
1   Mustard-Herb Vinaigrette 1 recipe follows
   Salt and black pepper t.t.
 

Bias slice the hearts of palm ¼ in., small dice the peppers and make the vinaigrette.

Clean the salad greens gently and dry well.

Toss hearts of palm, peppers, chayote and scallions together with dressing. Season with salt and pepper.

Place on the greens.
