1 cup  frozen tart cherries
6 Tbs  butter, melted
1/4 cup  orange juice
2 Tbs  cornstarch
1/4 cup  granulated sugar
1/4 cup  maple syrup
1/4 tsp  red food coloring, optional
5   eggs
1 1/4 cup  milk
1 1/4 cup  flour
1 Tbs  grated orange peel
 

Thaw cherries, reserving juice. Measure juice; you will need 1/4 cup; if there is not enough juice, add water to make 1/4 cup.

Place 1 tablespoon butter in each of 6 individual casseroles or large custard cups.

Combine cherry juice, orange juice, cornstarch and sugar in a small saucepan; mix well. Cook over medium heat, stirring constantly until thick and clear. Remove from heat. Add cherries, maple syrup and food coloring, if desired. Set aside.

Combine eggs, milk, flour and orange peel in the container of an electric blender or food processor. Blend on high speed 30 seconds.

Put 1/4 cup of sauce in each of the prepared casseroles or custard cups; keep any remaining sauce warm. Divide batter equally over sauce in each cup.

Bake in a preheated 400-degree oven 25 minutes, or until puffy and golden. Serve with remaining cherry sauce or maple syrup.

Bed and breakfast establishments in northern Michigan boasts lots of clean, cool, fresh air; pine and spruce trees; blue waters and memorable breakfasts. Don and Norma Blumenshine's Open Windows B&B in trendy, summer-loving Suttons Bay is no exception. Overlooking Grand Traverse Bay, Open Windows is surrounded by perennial gardens which guests admire from spacious bedrooms furnished with large, comfy beds and antique wicker chairs.

Outdoors, the traditional Adirondack chairs are Don's specialty. He custom made each of them from quality materials. He'll even make chairs for guests to take home.

The kitchen is Norma's special place. Cooking is her specialty and her breakfasts are real treats. She serves guests on the porch, deck or in the kitchen which overlooks the bay. There's always a hearty entree plus the freshest fruits from local growers. And, of course, her own homemade jams, muffins, coffeecakes and breads.

And many of her breakfasts foods contain cherries. "Using lots of cherries adds to our ambiance," she said, "and shows off the abundance of foods available in our beautiful area. During the season, I put fresh cherries in all our bedrooms. Rather than chocolates, I feel sweet cherries are a nice touch -- and healthier, too."

Norma's Cherry Maple Puff Pancake is a favorite of all guests. When repeat guests call for reservations, they always request that this breakfast treat will be on the menu. It's a pancake in the European tradition -- puffy, light and delectable -- but traditionally Michigan with local cherries and maple syrup.
