Green Velvet Cake
This was a big hit at Eggtoberfest 2004 with the kids - of all ages.

1 box white cake mix
3/4 bottle green food coloring (.3
  oz size)
1 tsp peppermint extract
canned Cream Cheese
green sprinklies

Directions
1 Use an inverted plate setter in the Big Green Egg at
   350.
2 Mix the cake mix made per instructions.
3 Mix in about 3/4 of the little bottle of green food
   coloring and 1 teaspoon of peppermint extract.
4 Pour into a Bundt type pan sprayed well with Pam.
5 Cook for about 45 minutes or until a toothpick comes
   out clean.
6 Rest until cool. Turn out onto a plate and frost with
   canned Cream Cheese frosting.
7 Sprinkle with green sprinklies.
