4 oz  bacon, diced
1/8 cup  clarified butter
1   medium onion, diced
1 1/2 Tbs  flour
1/2 tsp  chili powder
1   can red kidney beans
1 1/2 cups  cold water
1 cup  dry white wine
1 cup  sour cream
   Salt, to taste
   Freshly-ground black pepper, to taste
 

Fry bacon in pan and add clarified butter. Stir in onion and cook until soft. Add flour and chili powder and cook another 3 minutes. Add beans and 1 cup water to thicken mixture. Cook over low heat for 1 hour.

Gradually add white wine and remaining 1/2 cup water. Finally stir in sour cream and simmer 10 minutes. Season with salt and pepper and serve at once.

This recipe yields 6 servings.
