Look for shells that are not shiny. Shells may be white or brown, and yolks may be light or dark. Determine freshness by placing eggs in a bowl of cool water. Discard any that float. Never use eggs that have a doubtful odor, color or cracked shell, as salmonella can develop under these conditions.
